What is #WineStudio?

PROTOCOL wine studio presents an online twitter-based educational program where we engage our brains and palates! It’s part instruction and tasting, with discussions on producers, varieties, tourism, terroir, regional culture, food matching and what all this means to us as imbibers.


Our December 
Le Metro Wine club once again focuses on the wide world of sparkling wines. December is a funny month. It’s the height of our holiday season and busy seems to be the operative word but at the same time we’re continually looking for just a few special bottles to share and enjoy. What is it about sparkling wine that gets us all giddy?

Unmasking a World of Bubbles

Week 1: Tuesday 2 December – Approaching Bubbles with Aaron Epstein
We’ll also be speaking with importer Michael Newsome @MichaelDNewsome of Zigzagando Italian Wine Esoterica, tasting and talking the gorgeous NV Lini “Labrusca” 910 Bianco. Yes! A white Lambrusco. Week 2: Tuesday 9 December –  Mata Coloma Cava with Mike Tesarek Sacred Thirst Selections @SacredThirst
The wines are a reflection of winemaker Pere Mata’s passion. Pere farms 5 hectares in the town of Sant Sadurní d’Anoia in the heart of the Penedès. The work is all organic and by hand. He grows only the historical grape varieties of Xarello, Macabeu and Parellada as he feels that these are the grapes most suited to the task of speaking the terroir of Cava. Good for us! Week 3: Tuesday 16 December –  Torley Hungaria with Mike Tesarek and Frank Dietrich Blue Danube Wine Company @BlueDanubeWine
Hungarian wine, in any form, is just hot. And of course this bottle has it all: tart cranberry and strawberry, florals, with a caramelized spicy note. Pair it with BBQ, Mexican and Asian fare, and anything fried with some spice. Hungarians drink this with “abált szalonna” (steamed bacon bathed in Paprika and served cold.) Anything bacon works!
